Head Chef Mirko Gaul uses the modern concept of „Asian fusion“ cuisine and reinterprets the gourmet kitchen of Japan, China, Thailand, Vietnam, Indonesia and Malaysia.

At taku, awarded with one Michelin-star for years and 16/20 points at the Gault Millau, Head Chef Mirko Gaul and his team are creating deliciously unique delicacies.

Additionally, the skilled employees gladly recommend corresponding wines and are happy to explain the components of the exotic dishes, if you wish.

Cooking classes

It is only a few times a year, that taku's Head Chef Mirko Gaul offers a small group of guests a half-day cooking class. You may look over the shoulders of him and his team, while you are preparing traditional Asian dishes under the instruction of professionals. Specially themed cooking courses throughout the year give you the great opportunity to discover the different facettes of the Asian cooking art.

That much action sure makes hungry! Afterwards, you will enjoy your self-made meals at taku together with the other participants. The friendly service team will serve corresponding drinks. You may also impress your friends and family with your knowledge of the far Eastern cuisine. Every participant will receive his own taku apron for the professional look and his personal culinary book, in which you can look up your favorite recipes.

Because of the intensive care by our taku-team, the attendance is restricted to 10 persons.

Matcha tea ceremony 抹茶

Another taku innovation that Mirko Gaul has introduced after his culinary journey through Asia:

Our new Matcha tea ceremony is now available at taku. Directly prepared at your table! Matcha (jap.: „pulverised tea) consists of finest powder of crushed green tea which is used during the Japanese tea ceremony. This sort of tea has an intense green colour and a mellow sweet flavor.

To produce 300 gramm of Matcha powder, the traditional granit mills usually process the leaves for about an hour. This way of preparation of Matcha was probably developed in the 6th century in China. As used in the traditional East Asian medicine, the tea leaves are dried as medical plants and are milled afterwards.
This type of medicine was traditonally produced in Buddhist abbeys and mainly consumed there. Based on this tradition, the first tea ritual of the Zen and Chan Buddhists emerged. 

The taste of genuine matcha is called umami which symbolized the fifth sense of sensation.

Chef de Cuisine Mirko Gaul welcomes you at taku, the house of East Asian culinary delights. Mirko Gaul developed his own interpretation of the elegant and delicate East-Asian cuisine.

In his solid line he combines the ingenuity of the Japanese cuisine, savoury Chinese delicacies and influences of the spicy way of cooking in Vietnam and Thailand. The authentic East Asian cuisine is based on simple recipes while eliciting the finest flavours.
