In celebration of the Fine Food Days Cologne, the culinary creativity of Hanse Stube finds a new stage at vegetable farm Steiger: Chef Joschua Tepner presents his refined dishes right at the source of the ingredients. A unique opportunity to experience the special cuisine of Hanse Stube where its foundations are laid.

At a festive and royal 4-course dinner prepared by Chef Joschua Tepner and his team, RTL royal expert Michael Begasse will join you in reflecting on the royal highlights of 2024. Prince William, following his ceremonial coronation, is now officially the 'Prince of Wales,' and his three children are slowly realizing that they are not quite an ordinary family. Prince Harry turned 40. Has the Duke of Sussex mellowed out a bit, or is he still stirring up trouble against his father, the still 'new' King Charles III for many?
2024 was also the year of royal love. Princess Märtha-Louise of Norway married her controversial shaman, while Frederik and Mary of Denmark celebrated their 20th wedding anniversary. Scent of cookies in the house
At the beginning of the-Christmas period, there is the unmistakable scent of home-baked cookies. Children in particular love cutting out Christmas motifs and turning them into beautiful works of art. Under the guidance of our experienced pastry chef, the little bakers decorate fantastic, delicious creations. Snacking is expressly desired, after all, the result must be expertly checked for quality. Surely the children already know who they want to bring Christmas joy to with the finished cookies.
GOOSE season at hanse stube

From 1st November, the smell of Cologne's crispiest goose will once again permeate the kitchen of Excelsior Hotel Ernst. Head chef Joschua Tepner roasts the southern Oldenburg free-range goose until it is tender and juicy, with a wonderfully golden-brown crust. At restaurant Hanse Stube, your goose will be carved for you with precision and skill right at the table. In addition, we serve classic potato dumplings, apple red cabbage, candied chestnuts and raisin braised apples.
We kindly request that you make your reservation at least 24 hours before your desired visit. Please note that from Friday to Sunday evening reservations are only possible at 5 or 8:30 pm.

Once again this year, we will deliver the delicious roast, including the traditional side dishes, to your desired address. Additionally, you will receive the recipe for the final preparation and a jar of goose rillette from our head chef, Joschua Tepner.
We kindly ask you to place your order at least 48 hours prior to your desired delivery date, on weekdays. Please note that deliveries are limited to the Cologne city area. Of course, you are also welcome to personally collect the goose at the hotel.

TRADITIONAL EXCELSIOR STOLLEN
FAMOUS for GENERATIONS
The wait is over! You can once again indulge in the Excelsior Christmas Stollen this year. To enjoy this traditional culinary delight, visit us at the hotel and buy the Stollen at the reception. Of course you will also find us again at the "Christmas market at Cologne Cathedral", where we offer other exquisite delicacies in addition to the Excelsior Stollen.
For generations, the Stollen recipe has been kept in the hotel safe. At the beginning of September, Georg Plesser, the Managing Director of the hotel, takes it out and hands it over to the hotel's pastry chef. To sample the first Stollen of the year, Charles Roulet, the hotel owner, personally travels to Cologne to issue the production order for the Stollen.
The patisserie crafts this exquisite pastry with great care, using only the finest ingredients. For each sold Stollen, the Excelsior Hotel Ernst donates one Euro to a charitable cause.
