And listening to the sweet-sounding tones of talented pianist Robin Meloy Goldsby, who – after stints at New York’s Grand Hyatt, Plaza and Waldorf Astoria – now spreads her magic in our conservatory.

THE MASTER BAKER
Fabian Scheithe
His love of baking began here in Cologne. Our executive pastry chef Fabian Scheithe did his confectionery training in one of the most celebrated cafés in the city. This was followed by a global culinary journey. After stints at renowned hotels in Austria and Switzerland and the legendary Lanesborough in England, he served on cruise ships around the world. Since 2016 he’s been sharing all he learned back in his hometown – here at the Excelsior Hotel Ernst. And as well as the Wintergarten, he is also responsible for the unique desserts on the menus of the Hanse Stube and taku. In 2022 Fabian Scheithe was voted “Pastry Chef of the Year” by the restaurant guide “Schlemmer Atlas”.

*From 3rd July until 31st August, the Afternoon Tea will be held without piano accompaniment as the pianist is on her well-deserved vacation.

TRADITIONAL EXCELSIOR STOLLEN
FAMOUS for GENERATIONS
The wait is over! You can once again delight in the Excelsior Christmas Stollen this year. To enjoy this traditional culinary delight, simply visit us at the hotel and buy the Stollen at the reception. Of course you will also find us again at the "Christmas market at Cologne Cathedral", where we offer other exquisite delicacies in addition to the Excelsior Stollen.
For generations, the Stollen recipe has been kept safe in the hotel safe. At the beginning of September, Georg Plesser, the Managing Director of the hotel, takes it out and hands it over to the hotel's pastry chef. To sample the first Stollen of the year, Charles Roulet, the hotel owner, personally travels to Cologne to issue the production order for the Stollen.
The patisserie crafts this exquisite pastry with great care, using only the finest ingredients. For each sold Stollen, the Excelsior Hotel Ernst donates one Euro to a charitable cause.
